Ingredients:
eight big garden eggs
one cup sunflower/palm oil
one big onion
Habanero pepper
salt
one small ogiri okpei
two small smoked mackerels
Preparation:
Using a blender, grind the garden eggs to a puree and pour into a saucepan.
Cook on low heat until all the water evaporates.
After cooking remove from the plate and set aside.
Add some oil to a clean, dry pot and heat it up.
Then put the finely chopped onion and fry for about two minutes.
Then add the puree from the garden eggs and cook until the liquid again evaporates.
Then add ogiri okpei and habanero pepper (blended) and put some salt to your taste.
Stir well and add the smoked fish to the dish.
Stir and cover.
Cook for about 5-10 minutes over low heat.
